Marinate the Meat: In a mixing bowl, combine soy sauce, vinegar, brown sugar, salt, pepper, and minced garlic. Add the chicken or beef, mixing well to coat. Let marinate for at least 1 hour in the refrigerator.
Prepare the Skewers: Thread the marinated meat onto skewers, about 4–5 pieces per skewer.
